I love roasted vegetables. It can be so easy to prepare delicious vegetables that highlight the natural flavors in the vegetables. This recipe works great for all kinds of green vegetables, but, it’s definitely my favorite preparation for asparagus.
2-3 bunches asparagus
1 tsp salt
1 tsp pepper
Olive Oil
Pre-heat oven to 375.
Snap bottoms off asparagus and line on a baking sheet. Coat with olive oil, salt & pepper – mix well (don’t be afraid to use your hands) to make sure they are all coated.
Roast until tips of the asparagus start to brown.
