Cauliflower is such a versatile vegetable that can take on so many different flavor profiles. This preparation is a little sweet, a whole lot savory and absolutely delicious! It doesn’t hurt that it makes the kitchen smell amazing while it cooks.
2 tsp Dijon mustard
¼ cup maple syrup
¼ cup apple cider vinegar
1 tsp salt
1 tsp pepper
1 tsp fresh basil
1 clove garlic, diced
1 cup olive oil
Wisk together all ingredients (except cauliflower) to create sauce.
Remove leaves and cut cauliflower into steaks or florets (don’t be afraid to use the stem!)
Mix cauliflower into sauce and let sit to marinate for 30-45 minutes.
Spread cauliflower on baking sheet, pouring any remaining sauce over the top, bake at 375 until cauliflower starts to brown.
